REAL HOMEMADE SICILIAN PIZZA

Many of you have experienced the taste of REAL Italian pizza, especially that of the Sicilian variety. pizza with the perfect crust, a flavorful sauce and topped with Parmesan and Romano cheeses, Mm mm good! Now here is a low sodium version that will rival Grandmas!

What You Need.....

Dough

3 1/2 to 4 cup Bread Flour (Make sure zero sodium content)

1 1/8 cup Warm Water

1/4 cup Olive Oil

1 packet yeast

2 tsp.salt substitute

Place four in a large bowl, make well, pour in luke warm water, oil yeast and salt substitute. Mix together with your hands till you have one firm ball of dough. Kneed dough on a floured tabletop (about 10min.) until the dough springs back when you poke your thumb into it. Cover a bowl with oil by hand rubbing it onto the bowl with your hands and rub some oil onto the dough ball to so that it doesn't stick to the bowl. Place covered in a warm place and allow to rise for at least one hour. A turned off warm oven is best. After dough has risen, place it on a large oiled cookie or baking sheet and partially spread the dough ball out. Return the tray to the warm place and allow to rise another 1/2 hour. After the second rise spread the dough ball out to form to your cookie sheet. You can be making your sauce while the dough rises.

Sauce

1 can Whole or Diced Tomato's

1 can No Salt Added Tomato Paste

1 Can (tomato paste can) Water

1/2 Cup Olive Oil

1 TB. Oregano

1 TB. Garlic Powder

1 tsp. Salt Substitute

1 tsp. Onion Powder

1/2 tsp. sugar

1 tsp. pepper

1 can of No Salt Added Mushrooms if desired

1 Tbs. Parmesan cheese.

Combine all ingredients in a large sauce pan and let simmer for at least an hour, stirring often.

Making the Pizza....

After you dough has properly risen and you have spread out to form in your baking sheet, spread the desired amount of sauce onto the dough. Cover the pizza with grated Parmesan/Romano Cheese being careful to calculate then sodium level as this is where mos, if not all of your sodium will be coming from.

Bake about 20 minutes in a pre-heated oven until crust is golden brown. Allow to cool a bit before cutting.
