Homemade Tomato Sauce

What You Need...
1 Quart From your Homemade Tomato Puree
1 teapoon olive oil
1/2 green bell pepper, chopped
1 small clove garlic, minced
1/2 tsp.chopped fresh basil
1/4 teaspoon Italian seasoning
2-3 TBS. Burgundy wine
1 bay leaf
2 tablespoons tomato paste (WATCH SODIUM LEVEL, should be about 20mgs. serving)
DIRECTIONS:
In a pot large enough, combine all the ingredients and bring to a simmer. DO NOT ADD WATER to tomato paste unless your puree is already to thick. Simmer for about 1/2 hour and season (salt substitute and pepper) to taste.
SERVE
Trace of Sodium from wine & tomato paste.
