Low Sodium Dinner Rolls

What You Need ...
2 1/2 cups bread flour (No Sodium)
2 eggs at room temp.
1/4 cup olive oil
1/2 tsp. Salt Substitute
1/4 cup sugar
1 Pkt. Yeast
1/4 cup warm milk
2 TBS. Unsalted Margarine
In a large bowl or a food processor, mixed together the flour, salt substitute, yeast and sugar. Mix dry ingredients together then add the eggs and olive oil. Mix until all items are blended together then drizzle in the warm milk. It may be necessary to add an additional 1 or 2 TBS. milk or water to achieve a dough consistency.
Remove the dough from the bowl and form the dough into a ball on a floured surface. Lightly knead the dough ball pushing your thumbs into the dough ball. Place dough in a lightly oiled bowl, cover and set in a warm place to rise about 1 1/2 hours. After dough has risen, push down and cut into two even balls. Again, on a floured surface roll out each dough ball into an 8 -10 inch circle, like a pizza. With a pizza cutter or a knife, cut each of the dough circles into a 8 piece pizza. Taking the pizza slices roll them up from the large end to the small end. Place them on a sprayed cookie sheet. Set aside and allow to rise another 30-60 minutes.
Before baking, brush the tops with melted margarine. At this point you may season the butter with garlic, basil, or other salt free herbs. Bake for 12-15 minutes in a preheated 375º oven.
