Low Sodium Lemon Pepper Chicken

What You Need....
1 Whole Chicken (Split in Half)
Fresh Ground Pepper
2 Tbs. Un-Salted Butter or Margerine
Zest of a Lemon
1 Tbs. Lemon Concebtrate
Salt Substitute
2 Tbs. Water
A Note about Lemon Pepper Chicken. They do sell sprinkle version seasonings to make Lemon Pepper chicken but WATCH! Most of them are very high in sodium, you can find lemon pepper seasonings though that are low in sodium.
Begin by mixing the lemon zest, lemon concetrate, butter and water in a cup. You will use this for basting your chicken. Place your chicken halvesbreast side up on a cooking sheet or baking pan. Brush or drizzle on some of the lemon zest pepper mix. Use this basting mix to bast your chicken about every 10 to 15 minutes. Salt substitite and pepper chicken lightly every basting session to. You may also want to spoon the drippings over the chicken at each basting session as well.
To make this an even healthier dish, remove the shin from the chicken before cooking. Bake at 350º for 1 hour or until chicken is done and golden brown.
